Easy Recipe: Pesto Salmon


This is not my salmon as I didn't use tomatoes.  Plus, this looks way better than my photo did!

On my way home from the gym last night I was hungry and tried to think of what I had to make.  Generally when I hit the hungry mark, I don't like making anything.  I end up grabbing a box of Triscuits, a hunk of extra sharp cheddar cheese and some spaghetti sauce (preferably 3 cheese).  This is a delicious snack by the way.

Anyhow, I knew I had fresh wild salmon and hmm, oh, pesto.  I went to my handy iPhone to Google this thought and there were a ton of recipes.  I didn't want to make it too complex so here is my recipe.



Step 1: Preheat oven to 350 degrees
Step 2: Lay salmon on baking sheet (I use tin foil sprayed with Pam for easy clean-up)
Step 3:  Spread pesto onto the salmon, be generous (I used store bought pesto but homemade would be good too)
Step 4:  Bake salmon uncovered for 18 minutes
Step 5:  Throw a frozen single use packet or organic brown rice into microwave for 3-4 minutes.

It's perfect timing to take a quick post-gym shower and get in my PJ's.  I was curious if I would like the taste and my first thought was, "Wow, wild is SOO much better than farm raised" and my second was, "This is delicious, simple and my go-to."

Note:  The reason I like wild salmon vs. farm raised is the same concept to me as free-range vs. caged.  I understand that the number of fish is going down but the label said it was "Sustainably Farmed" whatever that means exactly, I am not sure.  Also, I know there is mercury in fish but I don't like all the antibiotics they use in farm-raised fish.  I am sure Whole Foods has organic, sustainably raised, antibiotic free, farm-raised, free-swimming salmon.  I just didn't happen to be at Whole Foods.  Do what you can, with what you have, and however it makes you sleep better at night. I will say though, the taste is a HUGE reason for the preference!
